Simple Seasonal Fruit Tart

Sometimes, even a simple dessert can stun — especially if you use fresh ingredients. You may have seen this simple tart recipe on our social media pages! It works as a great base for every season; fruit toppings can be chosen based on what is in season in your area. In the pictured tart, we used strawberries, blood oranges, blueberries, and figs.

Mise en Place

Ingredients

Crust:

  • 115 g unsalted butter room temp
  • 1/2 cup dark brown sugar
  • 1 tsp almond extract
  • 1 tsp cinnamon 
  • 3/4 cup all purpose flour
  • 3/4 cup almond flour
  • 1/2 tsp salt

Filling:

  • 2 cups mascarpone room temp
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tbsp vanilla extract
  • Zest of 2 blood oranges 
  • Various fruits of choice for topping

Tools

  • Sifter
  • Whisk
  • Stand mixer with paddle attachment
  • Zester
  • Mixing bowls
  • Pastry bag and tips
  • Pie or tart pan
  • Fork

Recipe

To Prepare the Crust:

Step one: Preheat oven to 350ºF.

Step two: Sift together all dry ingredients, then whisk to combine.

Step three: Cream butter and sugar until fluffy in stand mixer with paddle attachment.

Step four: Add almond extract to the stand mixer and mix fully. Turn off the mixer and scrape the bowl as needed. Slowly add dry ingredients until dough comes together in the mixer. (You can also use a food processor instead of a mixer.)

Step five: Put dough in a tart plate and use your hands to push it around until it is evenly distributed. Use forks to poke holes in dough.

Step six: Bake for 20-25 minutes until golden brown and puffed up. Remove from the oven and use the bottom of a glass or measuring cup to slightly push down puffed up dough. Let cool completely. 

To Prepare the Filling:

Step one: Mix together all ingredients in stand mixer with paddle attachment until creamy and stiff peaks form. Put into piping bag. (You can use a hand mixer or a whisk instead.)

Assembly:

Step one: Pipe filling into cooled tart crust. Use a knife to smooth it out. To create decorative ridges, use a fork to run lines across the top of the filling. Top with cut fruit.
